Albanian Sweet Mafisha from Rimmed®

Place the egg whites, which should be at room temperature, in a large bowl and beat with a mixer until they form firm white foam. Then add the white sugar and continue beating with a mixer until you have a stiff meringue. Sift the powdered sugar together with the vanilla and gradually add it to the meringue, stirring with a spatula carefully so as not to break the foam.

Line a large baking sheet with Rimmed® baking paper and pipe the mafishes either with a spoon or a piping bag into the desired shape. Place the pan in the preheated oven at 100 degrees and bake the mafishes for about 1 hour and 30 minutes.
